The most difficult game I have ever played was probably Jak 3.

 

[Square Ninja]

Devil May Cry 3 is nothing compared to the original DMC.

Ninja Gaiden is manageable once you realize you just need to be moving at all times and block every once in awhile.

Definitely the original Devil May Cry.

Resident evil 1 and 2 were challenging. in some aspects

dude DMC 1 is way harder than 3

Dirge of Cerberus was challenging for me, being my first shooter and all not to mention the enemies. Haven't gone near it since after beating it.
Chrono Cross. Everything else was pretty easy until it came to getting the scheme right when it came in the last battle. Only got it right once.
Chrono Trigger as well. Harder than CC IMO.

I don't know why the majority say DMC3 is the hardest in the series. It isn't, DMC1 is and it is the hardest game I've played.
