My money's on the Dodo or Gryphon.
I'm trying to think of what other characters are in Alice in Wonderland that haven't been mentioned yet. Old Father William? Meh, not likely, too small a role.
I don't remember too much about Through the Looking Glass, let alone characters he could play from there besides the ones already mentioned. (Although Humpty Dumpty would be an interesting choice).

NEW INFO: Looks like Alan Rickman is now a part of the project, and will be playing the Caterpillar. Christopher Lee's part is still unknown.

You know this is not the original Alice he's doing. He's making a film of American Mcgee's Alice. You know, the video game.

I haven't played the game but I do know some gists of it. Still, would've preferred a complete Tim Burton adaptation of the book.

Actually, it has been confirmed that this particular Alice will in fact be based on the original novel (obviously with Burton's specific creative influences, though). A comletely different Alice movie was put into pre-production a long time ago, and that film was based on the video game, with a completely different director; however, it has been put on hold so that this film can be made.
