When Sora returned to the realm of sleep at the end of the game he was in his 15 year old form, why did he need to be 14 for the events of this game?
Why did Sora and Riku need to be younger for this game?

Because in order to earn the Mark of Mastery, Sora and Riku needed to re-learn the ways of the keyblade. In order to do this, Yen Sid sent the two back in time to when they were first learning to fight.
When Riku returned to the Mysterious Tower with Sora, Mickey, Donald, Goofy, and Lea, he was no longer in Sora's dream. When he dives back into Sora's heart to save him, he returns to his Dream Eater form.

Edit: Ah, never mind the below. I realized it was also because Sora was still sleeping that Riku was still in his younger form with dream eater powers. Despite Mickey being there as well.
I had figured that Riku's clothing would have reverted when he made it outside Sora's dream in TWTNW, but I suppose that is because Yen Sid's magic probably wouldn't wear off until he and Sora truly returned to Yen Sid?

Basically, Sora and Riku had to go to a dream within the Destiny Islands world at the time before it was swallowed by darkness. Yen Sid figured this would be the easiest way to keep Sora and Riku away from unnecessary danger, but what he failed to realize was that at the time in KH1, Xehanort had already took away his body and also possessed Riku. Thus Xehanort was able to travel through different time zones in the dream world.
