Didn't Nomura speak in the Ultimania of Hearts being made of memories, at least in part, this rising the question of whether Organization's member really totally lack a heart?

No. There are Memories, and there are Hearts. Heartless ARE the Hearts yet they lack the Memories. Nobodies lack Hearts but have the Memories (well, the human shaped ones at least).
They are two separate "components".
