Ok, here's what happened. I found this Codebreaker cheat recently:

This cheat allows you to play as King Mickey in every world. It also forces Donald and Goofy into your team, no matter what the situation is.
Anyway, after finding this, I decided to hang out in Hollow Bastion as King Mickey. Eventually, I thought "hey, I wonder if Mickey can fight Sephiroth". I tried it and he did. I didn't win, since the save I was using was on Proud Mode, lvl 54. However, King Mickey did surprisingly good, for 3 reasons:
1. He jumps insanely high, allowing him to dodge attacks much easier than Sora.
2. He cant be knocked back. Basically, Mickey cant fall like Sora does.
3. The cheat I was using forces Donald and Goofy into your team, no matter what the situation is. That includes during the Sephiroth fight. That's right, with this King Mickey cheat, Donald and Goofy will help you fight Sephiroth. This is mainly useful because King Mickey cannot heal himself, so you can just let Donald use cure magic, and give Donald and Goofy tons of megapotions or hipotions.
The only things you gotta make sure you dont do are:
1. Do not watch the whole cinematic before the fight. When it starts, just pause and choose to skip the scene. The reason for this is that Mickey is not programmed into the cinematic sequences, so the minute that Sephiroth turns around to see your character, the game will freeze.
2. Do not use any reaction commands. The game will not freeze, but Mickey will. Mickey will suddenly start just standing still, unable to move. Luckily, one attack from Sephiroth will unfreeze you, but if I were you, I'd rather avoid all reaction commands than risk getting free hits from Sephiroth.

(p.p.s. when I say "do not use any reaction commands", that does not include the reaction command used to start the fight. you can go up to sephiroth and use the reaction to talk to him, but during the fight, you should avoid all reaction commands.)
