[admittedly school days is kind of boring and stupid but people seem to enjoy it regardless]
it's mostly just for the ending and how hilariously fucked up it is
What? No mention of Welcome to the NHK, Genshiken, Le Chevalier d'Eon, Eden of the East, Gunslinger Girls, Ghost Hound, Boogiebop Phantom, Gad Guard, Basilisk, Vandread, Cromartie Boys High School, or House of Five Leaves?
Well, screw you all too.
Also, skip Wolf's Rain's epilogue. It near ruins the entire series.

other 'musts' include:
- clannad if you're into comedy, romance, and maybe the best cast of characters in an anime. shit, even if you're not into romance, being an anime fan and not liking clannad is pretty impossible.
- kinda surprised no one has mentioned rurouni kenshin because that's like one of the few mainstream sword animes that isn't mediocre
- death note is also one of those animes that is hard to dislike -- it's getting better too as it looks like the "worship death note" phase is over
those are like my personal top three [in addition to monster and samurai champloo]. it's hard to give recommendations as there are plenty out there. i'd just google a certain genre of anime you think you'd be into, and you'll find tons to choose from.
