Spoiler ShowI'm pretty sure the only reason why this was even included in the game was twofold:
Meta reason is more than likely to allow them to continue using their current names so fans can keep calling them by the names we already know and love. Besides, Roxas and Xion don't really have any good alternative names they can really use. It certainly wouldn't do to start calling Roxas, Sora and Xion having a number for a name is super degrading. The only other solution would be to either make up something completely different for them (and possibly enrage fans) or keep their names the same.
Secondly, the issue comes up that they were given those names by someone who used those names to literally track and enslave them. It is a point of trauma and I think it is definitely worth bringing up that these names were identities given to them not for a reason of compassion but for control. Ignoring that point could be problematic and downplays the sigil quite a bit. I think including this scene was very touching, because it showed how the three of them are deciding not to reject and try to erase the trauma that happened to them but rather to try and accept and move forward, knowing that they have each other to lean on. It's like anyone that has a significant trauma in their life: it can often be very beneficial to have a support group who can help keep them upright. Not only that, but that group can often serve to consistently remind them that it can often be healthier not to suppress or try to erase and forget what happened, but to realize it doesn't define you and move forward.
I actually really appreciated this scene because I think it was sort of trying to address the fact that their names carry such a heavy burden of a time of pain in their lives, and the fact that they are going to start making their own identities, starting with claiming their names not because Xehanort gave it, but because it reminds them of each other and the bond they have.
It's possible that them still having the sigils in their name could be problematic in the future, but I'm not sure if foreshadowing was the point of that scene.

Spoiler ShowWhy couldn't they continue using their names regardless of the sigil? I think this must be something that will be explained in the future because the term "sigil" keeps appearing more and more in the series. I can't imagine they're going through all this trouble for something that doesn't really matter.
Spoiler ShowI think the point of their names being a source of trauma is because of the sigil and what it represents. That's why it was brought up, I think. People were asking about it in the base game, and I think they wanted to address that it wasn't a forgotten plot-point.
But in regards to the future, I'm sure that the RAX sigils themselves will not be ignored or pointless. Whatever role they play, who knows (maybe not even Nomura), but I'm fairly sure at they very least they will end up being some sort of ace in a pocket as it were if Nomura needs for some reason for something to happen Ex: (ah, see...this happened because of the sigils!). He tends to do that.
In the current moment I think it is meant to be a scene of closure of sorts.
I believe that sigils as a concept are going to become more greatly important, but who knows about the ice cream trio's ones, specifically. Perhaps the concept is something that will be explored in more detail with the mobile Xehanort...experience...thing.
Spoiler ShowLike it's meant to answer partially KHX Back Cover, regarding the traitor. Gula said the traitor bears the sigil, and yet we've seen none of the foretellers wear one on their clothes. And from this scene, not only can the sigil be placed on the clothes like in DDD, we're given the idea that the sigil can be some sort of magical seal.
So yeah, it's some sort of detail to answer who the traitor really is in KHX.
