I don't feel it's exactly right to say RIP. Rest in peace, maybe, but with the acronyms RIP, it just feels so gloomy...

Rest In Peace doesn't sound that gloomy to me. It sounds more like a way of saying "You've had a rough time, now you can finally rest".

R.I.P.? That doesn't sound all the gloomy either. I mean, I don't find acronyms to have much emotional force behind them. I mean, we're not saying the word "RIP" we're saying "R", "I", and then "P".
It just sort of sends a chill down my spine... I dunno.
You could always just not use the acronym. That's what I would do, atleast.
Then the question you're asking is something more than just a gravestone marking.
