Do they remember Apprentice Xehanort stabbing them from before they were Nobodies?

Does Xemnas look different from Xehanort or something; they recognize Xemnas's past self as Xehanort right?

If the first question is true, why do they want to follow the guy who took their hearts in the first place?

Is it because he's supposed to be so powerful that to resist is to be destroyed?

Would it make a difference if they ganged up on him?

It seems likely that they chose to actually become Nobodies to prevent themselves from feeling emotions. This is especially true for Xaldin, who made it so clear in Days that he hated having a heart, even going so far as tormenting Beast for holding onto his feelings.

And then there's his report as well:

Xaldin's Secret Report said:
Day 119: Hearts and Emotion

Watching that foolish beast flail about only deepens my disdain for humans and their incessant need to be pinned down by feelings. We became Nobodies precisely to avoid the shackles of emotion. It was only later that we realized the scale of that loss: that some things simply cannot be done without a heart. Nonetheless, I see nary a pleasant thing about it.

Besides, had they resisted, Xemnas would probably have demoted them into Dusks in a snap of his finger anyway.

Great quote; that explains things.

So Braig would be the exception then? --- In the DDD scene, it looks like he does not want to get stabbed.

Maybe one should look at it with a more specific outlook rather than the simple want/didn't want issue to begin with.

The Secret Ansem reports in KH II state pretty clearly that Xehanort's apprentices got willingly rid of their hearts in the process of further experiments.

If we hold that "fact" from the reports to be true, then one (pretty easy) explanation for Braig's surprise would be pretty much that the "how it happens"-issue is not what was originally planned since as far as anyone including Braig himself knew, Apprentice Xehanort had no access to a Keyblade.

Braig's initial reaction with asking "is this really how you wanted it?" indicates that they did already have made plans going into the direction that is shown, but Apprentice Xehanort is not following the steps Braig actually expected to be taken.

So, in short, Braig is not really surprised about the what but the how it happens.
Not to mention that getting stabbed by someone else, regardless of the eventual outcome, is an unpleasant prospect for anyone that isn't a total masochist.

There's also still the possibility that Braig expected to be not included in the procedure/experiment because he already carried a fragment of Xehanort willingly (evidenced by him having golden eyes already during the final battles of BBS), and thus being caught off-hand by Apprentice Xehanort's sudden change of how the plan is going to unfold.

I think that Larxene also made some mention of purposefully giving up her heart, not that she was a founding member...

Yes, that was discussed between Marluxia and her in the novels, she stated how she and Marluxia were better off without hearts and how having a heart was stupid (or something along those lines), but considering it was in the novels, it isn't first-tier canon like the games themselves ^_^

^ So long as nothing stated by Nomura or in the games themselves, since they are the first tier canon, anything you see in a novel can be taken as possibly true.
(at the very least taken as truth until stated otherwise by 1st tier canon)
