First you get her first form, then Griever, then Ultimecia fuses with Griever, and then Ultimecia shows her true final form, where the time is fully compressed... Its a cool and hard fight, I tell ya...
But worth it, cuz truly, no one ever said to me they hated the ending of FFVIII. Everyone I know loved it... (tip: watch even the credits, cuz after that it aint over yet...)
